Give perfectly poached pears the drizzle they deserve with this oh-so-good butterscotch chocolate sauce. Incredibly indulgent and luxurious, yet so simple to make, a perfect dessert to wow any guests!
Ingredients
- 6 medium/firm dessert pears
- 350g caster sugar
- 1 vanilla pod, cut in half
- 1 cinnamon stick
- 1/4 tsp ground nutmeg
- 170ml Double Cream
- 200g Lily O’Brien’s Crispy Butterscotch Chocolate (you’ll need just under 2 x Share Bags), roughly chopped
- Optional: Ice cream to serve
Method
1. Core the pears from the bottom then leaving the stalk in place, peel each pear. Slice a little off the bottom of each pear to make a flat base.
2. Place the sugar, the vanilla pod and the cinnamon stick into a large pan. Pour over 750ml water and simmer until the sugar dissolves and the mixture thickens into a syrup. Sit the pears into the syrup and poach gently for 20 minutes, or until the pears are tender. Carefully remove each pear from the syrup, reserve 2 tbsp of the sugar syrup for the chocolate sauce and set both aside.
3. Place the double cream and chocolate in a small pan and warm over a low heat, stirring until the chocolate has melted. Stir in the reserved sugar syrup until the sauce is nice and shiny.
4. Drizzle the chocolate sauce over the pears and serve. Delicious just on their own or with ice cream.
